1 Choose Your Calculation Mode
The calculator offers two ways to calculate your feeding amounts:
- I have X starter: Use this when you know exactly how much leftover starter you want to feed. For example, if you have 50g of starter left in your jar, the tool will tell you how much flour and water to add to it.
- I need Y total starter: Use this when your recipe calls for a specific amount of active starter (e.g., 200g for a bread recipe). The tool will calculate exactly how much seed starter, flour, and water you need to mix to get that exact final amount with zero waste.
2 Set Your Feeding Ratio
The feeding ratio is usually written as Starter : Flour : Water. In our calculator, you select the ratio of Starter to Flour (e.g., 1:2), and the water is calculated based on hydration.
Common Ratios:
- 1:1 (Maintenance): Good for daily feedings. It will peak in about 4-6 hours depending on temperature.
- 1:2 or 1:3 (Overnight): Gives the starter more food. Ideal for feeding before bed, allowing it to peak in 8-12 hours.
- 1:4 or 1:5 (Long Ferment): Good for skipping a day of feeding without refrigerating, or for very warm environments.
3 Adjust Hydration
Hydration determines the thickness of your starter.
- 100% Hydration (Default): The standard for most liquid starters. Equal parts flour and water by weight.
- Lower Hydration (e.g., 60-80%): Creates a stiffer starter (like a stiff levain or lievito madre). Stiff starters often taste milder and peak more slowly.
- Higher Hydration (e.g., 120%): Creates a very liquid starter, which ferments rapidly and produces more lactic acid.
4 Calculate Water Temperature (Optional)
Temperature control is the secret to consistent sourdough baking.
If you enter your room/flour temperature and your desired target starter temperature (typically 25°C or 77°F), the calculator will tell you exactly how warm your feeding water should be to hit that target.
Water Temp = (Target Temp × 3) - (Room Temp × 2)(Assuming flour temp equals room temp and friction factor is negligible for mixing starter).
